Ingredients:
- 1 pound box of mochiko
- 3 C sugar
- 1 T baking powder
- 1/2 C butter
- 5 eggs, beaten
- 1 tsp vanilla
- 1 12-oz can coconut milk
Directions:
- Melt butter and set aside to cool.
- In a large bowl, combine all ingredients and mix with spoon until batter is smooth.
- Pour into well-greased 9" x 13" pan. Bake at 375 deg. F for 1 hour or until toothpick comes out clean.
- Cool, then cut into squares.
