Mango Bread (Fusayo Sakasegawa Scannell)

Ingredients

  • 2 C flour
  • 2 tsp baking soda
  • 2 tsp cinnamon
  • 1/2 tsp salt
  • 3/4 C vegetable oil
  • 1 tsp vanilla
  • 1 C sugar
  • 2 C mashed mangoes
  • 3 eggs, beaten
  • 1/2 C raisins, optional
  • 1/2 C nuts, optional
Directions
  1. Sift flour, salt, baking soda, and cinnamon.
  2. Make a well in the middle of the dry ingredients mixture and add eggs, oil, vanilla, sugar, mangoes, raisins and nuts.
  3. Pour into well-greased loaf pans.
  4. Let stand 20 minutes before baking.
  5. Bake one hour in a 325 to 350 degrees oven.
