Another newbie. Haven't used my slow cooker in a while :).
Ingredients
- 2 pounds boneless, skinless chicken thighs (could use other chicken pieces)
- 1 tsp salt
- 1/2 pepper
- 2 (16-ounce) containers of medium salsa
- 1/4 C chopped fresh oregano
- 8 cups rice
- Chopped fresh cilantro and lime wedges, for serving
Directions
- Add chicken to slow cooker; sprinkle evenly with salt and pepper. Add salsa and oregano.
- Cover and cook on HIGH until thermometer registers 165 deg. F (about 2 hours).
- Turn off slow cooker and transfer chicken to a large heatproof bowl.
- Shred chicken; add liquid from slow cooker as needed.
- Serve over rice, garnish with cilantro and serve with lime wedges.
