Hawaiian Style Blueberry Cream Cheese "Pie"


Crust:
  • 1 C (2 sticks) unsalted butter 
  • 1 C whole wheat flour
  • 3/4 C flour
  • 1/2 tsp salt
  • 1/2 to 3/4 C chopped nuts
Add butter, flours, and salt to mixer and beat the butter into the flour until it resembles coarse sand.  Or use food processor and pulse until combined.   Mix in nuts.  Cover bottom with parchment paper or spray with Pam.   Press evenly into the bottom of the baking pan.

Place pan in middle of oven.
Bake at 350 deg. F. for 20 to 25 minutes or until the crust is golden brown.  Let cool completely, at least one hour.  

Filling:
1 package 8-ounce cream cheese
1 cup sugar
1 teaspoon vanilla
1 tablespoon lemon juice
1 pint heavy whipping cream
1 teaspoon cream of tartar
1 or 2 cans blueberry pie filling

Cream the cheese and sugar, add vanilla and lemon juice.  Beat whipping cream with the cream of tartar, until soft peaks form.  Fold into cream cheese mixture.  Chill for about 20 minutes.  Pour into baked pie shell and cover with blueberries pie filling.
