Taco Soup
1 ½ lbs ground beef, browned
1 onion, chopped
1 to 2 cups tomato juice
15 oz can tomato sauce
2 10 ¾ oz cans cream of potato soup
10 ½ oz can beef broth
2 15 oz cans kidney beans, drained
1 ¼ oz pkg taco seasoning mix
Garnish: corn chips, Monterey Jack cheese, shredded and sour
cream
Combine all ingredients in a 5 qt slow cooker, heat on low
for approximately 6 hours. Serve over
corn chips and sprinkle on cheese and sour cream!
