Cucumber Kim Chee (Fusayo Sakasegawa Scannell)

2 to 3 pounds cucumber (cut in cubes)

Boil and pour the following over cucumber:
2 C water
5 T Hawaiian salt
Let stand 30 minutes.  Drain and make new sauce.

Sauce
1 C water
1/4 C vinegar
2 T sugar
Garlic
Chili pepper
Ginger

Mix the above.  Pour over cucumber and bottle.
Note:  Ko Choo Jang may be used in place of chili pepper.
